Bold & bright red with an incredibly smooth texture and a burst of wasabi and yuzu citrus in my mouth. 👄
This tuna from Ehime prefecture, Japan, is marinated with soy sauce overnight; complete with Hokkaido yumepirika rice 🍚 that is known for its crème de la crème grains - naturally sweet, soft and sticky.
Unlike Ootoro (fatty tuna) and Chutoro (medium fatty tuna), Akami is used for this 🍣. It is the leanest part of the tuna 🔪 from the back meat. Darker red in colour, meatier and bolder taste profile.
